1/3 cup honey

How to Make Panna Cotta

Step One:

In a medium saucepan, heat the milk and cream over medium-low heat. Add the granulated sugar and the vanilla extract, and stir until the sugar dissolves. If using a vanilla pod, simply slit the pod open and scrape out the seeds, adding both the seeds and the pod to the saucepan. Continue to cook the mixture, stirring occasionally, until the milk and cream are just starting to simmer. Remove from the heat and discard the vanilla pod if used.

Step Two:

Steep the gelatin in hot water for a few minutes until it has softened. Once the gelatin has softened, stir it into the milk and cream mixture, mixing well to make sure it is fully dissolved. Let the mixture cool to room temperature then pour into your serving dishes. Place the dishes in the refrigerator and let the panna cotta cool and set for at least four hours, but preferably overnight.

Step Three:

While the panna cotta is setting, you can prepare the berry syrup. In a small saucepan, add the mixed berries and honey and cook over medium heat for about 5 minutes or until the berries start to breakdown and the mixture becomes syrupy. Remove from the heat and let it cool to room temperature. Once the panna cotta has set, drizzle the berry syrup over the top before serving.
